Even though we have been moving somethings...won't be able to really get in there for a few more days...we still have to eat. My wonderful husband decided to cook a turkey on Sunday, so we have been eating that. Here's the menu for this week. So far it's been really tasty. Have a great week everyone!

Very Busy
We hardly ate anything off of last weeks menu. We have been over at the house cleaning, moving and sorting, sorting, sorting. So, I will not be posting any menus until next month. I will be so busy I won't be planning anything. I see a lot of sandwiches and salads in my future. LOL

We bought a home!!!
Hi Everyone...
Not much going on in my life...NOT!! We have just purchased a park model in our RV park. I am very excited. No more stairs for this old bod to climb up and down. More room and actually real seperate rooms...LOL. Now I can send my husband to his room and shut the door...woo hoo. Lots of storage, more space, a covered patio and it came furnished. Love it. I can't wait to be able to really decorate something and change some furniture around. We will be moving (2 doors down) sometime at the end of the month. So, my next few weeks will be spent decluttering and throwing out stuff I do not intend to take with me. Finally something exciting happening in my life...LOL.
For those who care...here is the menu for the next week. Soon I will have a working oven and then look out...casseroles here I come...LOL.
Lent starts this Wednesday so we will be eating fish on Friday's until Easter. (No, we are not Catholic, although we are believers and observe Lent.) It's just something we do each year. Trying to get in the habit of eating fish more often

Ugh...not really a writer...

2/7 Monday =Loupy's Easy stove top Tuna and Noodles with peas and Cheddar Bay Biscuits (under Breads/Biscuits/Muffins)
2/8 Tuesday = Spicy Garlic Lime Chicken (under Chicken recipes) fried turnip and potatoes and steamed cauliflower
2/9 Wednesday =Ham Steak Over Greens with Apple-Cider Sauce (Under Ham recipes) with creamed corn and sliced tomatoes
2/10 Thursday = Richard's Loaded Turkey Burgers, Tropical sweet potato fries (Under potato recipes) There will be lettuce, tomatoes, onions etc on the burgers.
2/11 Friday = Loupy's homemade spaghetti sauce, green salad and garlic bread

Some strides and some failings...
Wow...that 17 day diet is a killer. My husband and I could only get a week into it. Unless you are a big veggie eater I don't recommend it. It is brutal. I thought I could do it for the 17 days, but I was so sick of salad and broccoli (which I love) and "flax" everything, green tea and salmon...I just couldn't do it. I barely can swallow salmon when I have to, but to have it so often, it was expensive and I just couldn't do it. There were absolutely NO carbs on this diet, and for a carb-aholic...I couldn't handle it. I do think that if we were younger, this might have worked. But we are older, and the restrictions were too much especially for my husband who is diabetic. We did try...but it was too restrictive, so back to Weight Watchers for us.
One thing we have been able to do is keep our resolution to stay away from fast food places. We have NOT been to one. And...I must say I don't miss it at all. My husband makes better hamburgers than any fast food place. And, if I plan my meals there is no reason for us to go. It was only for convience anyway.
Both of us feel better and I am enjoying planning my meals and cooking occasionally again. We are keeping it simple. Just read my menus and you'll see. Sometimes I leave off the extras because I don't know what I have in the freezer out in the shed. I guess I should go clean it out and see what's on the bottom...LOL. I sure do love researching new recipes.
Last night we decided to have my Tequila Lime shrimp. We had small peppers, butternut squash, pears and pineapple with the shrimp on skewers. It was delicious.
Don't know what we will have today. Just some snacks I guess watching the Super Bowl. I have crackers and cheese, little smokies, chips and veggies and dip and beer...LOL. This should be enough for 2 people.
BTW...have you tried the Lays Baked Parmesan and Tuscan Herbed chips? Wow...they are fantastic. I love them. Also love the Rice Works sweet chili chips. They are made with brown rice. Both of these are a little spicy, but that's why I really love them.
Well, better get going. I have lots of recipes to research and then I have to plan my menu for the next week. I'll be back to post that later.

Well, off again to a new start of a great week. It is so very cold here even in AZ. We are to be in the 40's and that is about 30 degrees lower than we were a few days ago. But, I am so glad that we don't have snow....I hate snow.
